Hello Jeff: The marmalade is fabulous! When I popped the lid off, the
scent of sunny lemon burst out. It's very difficult not to just spoon eat it out of the jar.
I compared it to my usual orange French marmalade, Bonne Maman, and yours is off the charts!
You can be assured that all of my spoons go into the dishwasher completely licked clean.

Our Eureka lemon tree produces great fruit, but it ripens in late January,
when we don't have anything else on the trees and don't go to market.
So Laurence set about making marmalade.
She cooks it in small batches, only two and a quarter pounds of lemons at a time,
so that the marmalade cooks quickly and all the flavor is preserved.
Only lemons, sugar, and water are used, no additional pectin.
Light gold color, delicate gelled texture, perfect sweet/acid balance,
and of course that entrancing lemony flavor make for an addictive taste.
A killer ingredient in our pistachio-lemon cake.
Also great as an ice cream topping or stirred in yogurt, spread on waffles, and as a condiment with grilled chicken and seafood.
