Feijoa Recipes
Feijoas, also called pineapple guavas for their aromatic scent, are not commonly used in cooking, which is too bad because they are a delicious flavor in mousses, gelato,
or panna cotta.
Strain the pulp to remove any gritty texture.
Or try this fun drink:
Odessa
The other day, inspiration struck as I had just gathered an armload of pineapple guavas.
I came up with a new drink I am calling the Odessa, after the Black Sea resort,
because Russians are crazy about this aromatic fruit,
which Georgians used to ship to Moscow in the days of the Soviet Union.
Serves 2
Scoop the inside of four fresh feijoa (pineapple guavas) into a blender.
Add 2 tablespoons of simple syrup, the juice of 1/2 a lime, and blend until smooth.
Strain through a sieve to remove grit.
Shake with a cup of crushed ice, and 4 ounces of vodka.
Serve in chilled martini glasses.
