BING AND LAMBERT CHERRIES Bees love to dance in the cherry blossoms, and everyone enjoys the ruby red fruit Description: We only have two cherry trees, a Bing and a Lambert, and we look forward to their fruit every year. Bing is more rounded and darker red than Lambert, which has a heart-shaped fruit and brighter scarlet skin. Both are sweet, and richly flavored, with a firm texture that is bursting with juice. Season: Late May Size: medium to large fruit Suggested uses: Lambert is best eaten out of hand, while the meatier Bing can be eaten fresh, baked, or made into preserves. Shelf life: Keeps for 1 week in the refrigerator. Bing can be frozen for later baking.
