DOYENNE DU COMICE PEARS

With the highest sugar content of all pears, the pyramid-shaped Doyenne du Comice - generally sold as Comice in the USA, is sweet and juicy, with a rich buttery flavor and a fine, smooth, melting texture that makes it perfect for snacking, or served as a dessert pear with cheese.

Comice's greenish skin color changes very little during ripening, so don't look to assess ripeness.

To test the ripeness of a pear, don't squeeze the body, but rather apply gently pressure to the neck. If it yields, the pear is fully ripe.

Size: 16 to 28 per metric layer

Suggested uses: Comice are so good eaten fresh that cooking them would be a shame. This pear deserves center stage.

Shelf life: Can be delivered chilled and firm, in which case it will keep at 32 degrees for 3 weeks. To soften, bring to room temperature for up to 5 days. Can also be delivered ready to eat.
