"SWEETSHOOT BAMBOO"
Phyllostachys Dulcis

bamboo shoots

"Sweetshoot bamboo" is the common name of this variety,
prized for its tender texture and sweet, delicate flavor.

"The aromatic, just-cooked shoots taste like artichoke, corn and hearts of palm,"
writes Laura McCandlish in an article for NPR's Kitchen Window.

Our quarter acre bamboo grove was planted by original owner George Oki with the fresh shoots in mind. It also serves as a windscreen and favorite roosting place for myriads of birds.

Season: April, May

Size: 6 to 8 inches long, up to 3" in diameter at the base.

Suggested uses: Steamed, grilled, stir-fried

Shelf life: 15 days in the refrigerator.
